If you bake one thing this month, make it these. 💜 If you bake one thing this month, make it these. 💜 Juicy blackcurrants, sweet apple, and a hint of cinnamon, all wrapped up in a soft muffin with a crumbly topping… they're the perfect addition to lazy garden afternoons, picnic baskets, and having on hand for surprise visitors. ☀️Find the recipe for our Apple and Blackcurrant Crumble Muffins below... 👇🏽Serves: 10–12
Time: 35 minutesIngredients:
200g self-raising flour
1 tsp baking powder
1 tsp cinnamon
100g caster sugar
2 eggs
120ml milk
80ml vegetable oil (or melted butter)
1 apple, peeled and diced
100g blackcurrants (fresh or frozen)Crumble Topping:
50g oats
30g butter
2 tbsp brown sugar
½ tsp cinnamonMethod:Mix the flour, baking powder, cinnamon, and sugar in a bowl.In a separate bowl, whisk together the eggs, milk, and oil. Pour into the dry ingredients and stir gently until just combined.Fold through the diced apple and blackcurrants. Spoon the mixture into a lined muffin tin.To make the crumble topping, rub the butter into the oats, brown sugar, and cinnamon until crumbly, then sprinkle over each muffin.Bake at 200°C for 5 mins then turn down to 180°C for 20 minutes until risen and golden.Cool slightly and enjoy warm or packed as a seasonal snack.#blackcurrants #muffins #blackcurrantrecipe #baking
