Spring feasting just got an upgrade with our Black Spring feasting just got an upgrade with our Blackcurrant Brioche Bread & Butter Pudding. Soft, buttery layers meet bursts of bright, juicy blackcurrants for a dessert that’s perfectly balanced - sweet, sharp and just the right amount of indulgent.Made for longer days, lighter evenings, and easy spring get-togethers. 💜Serves: 6
Time: 35 minutesIngredients:Blackcurrant Jam:600g Blackcurrants
400g Sugar
Juice of ½ a lemonPudding:6 Brioche swirls
1 jar blackcurrant jam
40g butter, softened
150g blackcurrants (fresh or frozen)
3 eggs
300ml double cream
200ml milk
1 tsp vanilla extract
½ tsp cinnamon (optional)
Icing sugar (to serve)Method:Make Blackcurrant Jam- Add blackcurrants, sugar and lemon juice to a pan and bring to the boil. Simmer for 10 minutes.Whisk together the eggs, cream, and milk until smooth Optionally, add vanilla, and cinnamon for more flavour.Spread blackcurrant jam over the base of the baking dish. Layer the brioche over.Pour the custard mixture over the buns and press down gently so they soak it up. Leave for 10 minutes to absorb.Add dollops of blackcurrant jam over the top.Cover with foil and bake at 180°C (160°C fan) for 15-20 minutes until golden, puffed, and set in the centre.Dust with icing sugar and serve warm with vanilla cream.#britishblackcurrants #blackcurrantrecipes
