Blackcurrant and Banana Loaf

Makes: 8 – 10 slices
Time: 50 minutes


150g Blackcurrants, plus 1 tbsp for sprinkling on top
150g Oats
200g Self-raising flour
150g Melted butter
100g Natural or plain yoghurt
4 tbsp Mixed seeds
3 Eggs
2 Bananas
1 tbsp Brown sugar – optional
1 tsp Vanilla
1 tsp Baking powder
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Ginger (optional)


Apart from the blackcurrants, mix all the ingredients together until well combined.

Fold in the blackcurrants (keep 1 tbsp to the side) and pour into a lined bread tin, scatter over the remaining 1 tbsp of blackcurrants and the brown sugar, if using, and bake at 180 for 40 minutes, until a skewer comes out clean.

Leave to cool before slicing.
