Blackcurrant Dressing

Prep time: 10 minutes

INGREDIENTS    

100g Blackcurrants 

½ lemon juice 

1 tbsp Honey

2 tbsp Blackcurrant  vinegar

1 tsp Dijon mustard

1 garlic clove, crushed 

Pinch of salt 

½ diced shallot

100ml Rapeseed oil

Mixed salad leaves

METHOD  

First, squeeze the lemon juice over the blackcurrants then whizz and sieve – or push them through a fine sieve.

In a jar, mix together the blackcurrant and lemon mixture with honey, vinegar, mustard, garlic, salt and shallot.

Once really well combined, add the oil and put the lid on before giving the dressing a really good shake. Give it a little taste and add a dash more oil or vinegar, according to how you like your dressings.

Drizzle over salads and enjoy.
