Fig and Ricotta Toast

Prep time: 30 minutes
INGREDIENTS
1 pack of peppered salami
3 fresh figs
150g ricotta
2 tbsp honey
Handful of Rocket
4 slices sourdough, toasted
3 sprigs thyme
Drizzle:
100g blackcurrants
2 tbsp honey
METHOD
Whip the ricotta until creamy, season with salt and pepper. Toast your sourdough and spread over the ricotta.
Drizzle honey over the figs and bake for 5 minutes until soft then top your toast with salami, figs and rocket.
Make your dressing by stirring the berries and honey together over a medium heat for 5 minutes, once the berries start to release their juice you can drizzle over your toast.
