Blackcurrant & Thyme Sorbet

Prep time: 10 minutes

Freeze time: 1 hour

Serves: 6-8 portions

INGREDIENTS        

450g British blackcurrants

100ml filtered water

100g golden caster sugar

Juice from 1 fresh lemon

¼ tsp salt

3 sprig fresh thyme

 

METHOD

Blend all of the ingredients together (leaving 1 sprig of thyme to garnish) in a food processor / blender.

Pour the sorbet mix into a loaf tin (or baking dish) and leave to set in the freezer.

Take out 10 minutes before serving to soften then garnish with a few fresh blackcurrants and a few thyme leaves.

*top tip, depending on what herbs you have, this also works brilliantly with fresh mint leaves too!
