Blackcurrant Crumble Bars

Ingredients: Serves 10 

250g Granola 

2 tbsp coconut flakes 

200g oats

2 tbsp Honey

125g cold butter

1 tsp. cinnamon

For the Filling

200g Blackcurrant Jam

Method:

  1. Put half of the crumble ingredients into a whizzer and pulse until the mixture starts to come together. 
  2. Line your oven dish with parchment and push the mixture into the base, pop into the fridge while you make the rest of the topping 
  3. Put the rest of the crumble ingredients into a bowl and rub together until it forms little balls. 
  4. Spread the jam over the cooled base them top with the rest of the crumble. 
  5. Put into a pre heard 180 oven for 15 minutes, until the top starts to brown. Leave to cool and store in the fridge. 
  6. Cut into squares and enjoy
