Mother’s Day Coffee Biscuits

Makes: 24 biscuits
INGREDIENTS
300g plain flour
200g ground almonds
30g caster sugar
1 sachet of yeast
25g butter
Zest of 1 lemon
Zest of 1 Orange
2 eggs
100g blackcurrants
150g pistachios
1 tsp cinnamon
150ml sweet wine
METHOD
Mix together the flour, ground almonds, sugar and yeast, rub in the butter with your fingers then add the rest of the ingredients and bring together until the mixture forms a dough.
Shape into an oblong shape and about an inch high and place onto a lined baking tray, brush with egg wash.
Bake at 180 for 15-20 mins until golden brown.
Leave to cool then slice into biscuits, as thick as you like, but I like mine slightly less than a finger thick is recommended.
For a harder coffee biscuit, put the sliced biscuits as a single layer on a baking tray and bake for 5 more minutes, or to your liking.
