Berry Burst Mince Pies

Ingredients:
200ml Ribena Winter Spice
250g Mixed dried fruit
1 tbsp Blackcurrant jam
1 large cooking apple diced
Walnuts roughly chopped

Pastry:
250g Plain flour
125g Butter
70g Icing sugar
2 Egg yolks
Water

Streusel Top:
100g plain flour
50g demerara sugar
75g chopped walnuts
750g butter
1 tsp cinnamon

Method:
First, make the pastry then roll out and cut into rounds to pop into your muffin tray. Put into the fridge while you make the filling. Simmer the filling ingredients together until lovely and soft then leave to cool. Whizz the topping ingredients together then lay on a baking tray and freeze for 10 minutes. Spoon the filling into the cases and top with the streusel. Bake at 180 for 15 minutes.
